Pinterest .....My Virtual Cork Board

Lately I have really been getting into this thing called Pinterest...have you heard of it.  :)  Well, I myself am loving it!  If you haven't tried it yet I encourage you to check it out. 

What is Pinterest?  Well, I would say it's a virtual way of expressing yourself.  I remember in Jr. High I had an entire wall in my room done in cork board, (ah, the 80's) I loved it.  I was able to pin anything I wanted to share, see keep, whatever.  Think of it that way.  A giant cork board, but everyone can see it AND you can share and organize all your beautiful treasures with others. 

While pinning on Pinterest I have come across so many wonderfully, delicious sounding recipes.  I finally decided to actually try a few.  I thought it would be in my best interest plus my fellow pinners to hear the outcome of these recipes.  Where they as good as others say?  Where they really that easy to make? 

I made was Crockpot Italian Chicken.  It was so yummy.  My family could not get enough.  It was super easy, there were less than 5 ingredients plus you just let the crockpot do the cooking.  Love it!!  Here is the recipe:

Crockpot Italian Chicken

4 chicken breasts

1 packet dry Zesty Italian dressing (Regular is fine but I like zesty better. Sometimes I use a packet and a half.)

1 (8 oz) package cream cheese, softened
1-2 cans cream of chicken soup (depending how cream cheesy you want it)

Place the chicken in a crockpot and sprinkle Italian dressing over it. Combine cream cheese and cream of chicken soup in a small pot over low heat and pour over chicken. Cook on low in the crockpot for at least 4 hours. You can leave it in there all day.  Once chicken is done you can leave the chicken breasts whole, cube it, or even shred it. I always cut the breasts into tenderloin size strips. Once you have cut up the chicken, throw it back in the crockpot and stir into the sauce.
If you feel the sauce is too thick you can thin it to your preferred consistency with a little milk. Serve over pasta or rice.

I hope you family enjoys it as much as mine did.  My young daughter had seconds and she was super excited to eat it again for leftovers.  It doesn't get much better than that!

Does your Red Robin Have a Happy Hour like this?  Our family loves eating at Red Robing, but sometimes their prices are a little high.  Now, don't get me wrong.  Their burgers and wraps are delicious, but to my family the cost is just a little high. 

Doug's birthday was in December.  We celebrated with a movie then a little food.  We had trouble picking the restaurant so we decided to try Red Robin.  We got there at the perfect time, from 3-6 AND 8 until close is HAPPY HOUR! They had some good deals and good food! They have $3, $5 or $7 appetizers and drinks for draft beer 16oz. for $2.50 or 22oz. for $3.50. You can also choose a fruity margarita for $3.50. (they had a few other choices)


Doug and I split the Chili Nachos Reg. $9.99 Happy Hour $5 and the Hot Spicy Wings Reg. $9.99 Happy Hour $7. Doug drank water and I had (2) 16oz. beers. The wings were hot and delicious. The nachos were piled with chili, cheese, chips, sour cream and the best of all guacamole! I would recommend going their for Happy Hour to anyone! it was Yummy!!

Check your local Red Robin and see if they participate in Happy Hour.  The only negative thing I saw was you had to sit at the bar.  At the one we went to there were only 10 seats available.  Check it out though.  We had a fun, inexpensive evening of good food and a great time!!
