Cryptic Food Packaging? Nobody's Got Time For That?
Food Labels, Demystified.....Cryptic food packaging? Nobody's got time for that. I do my best to eat healthy, but sometimes it is so hard to figure out what the food labels are trying to tell me! Here, what some of those health-food terms really mean, so you can move on the next isle already.
Cage-free or free-range - The chickens were raised un caged inside or outdoors. Sounds good, but neither guarantees that the birds actually went or were fed a diet free of pesticides and antibiotics. (Pesticides have been linked to cancer, while antibiotics can contribute to antibiotic-resistant bacteria.) For that, buy poultry and eggs labeled as "USDA Organic," I am lucky enough to have friends that raises range-free chickens that are also fed a diet free of pesticides and antibiotics.
Sprouted - This label is used for grains, legumes and seeds that have been left in a warm, moist setting until they literally start to sprout little tails. they tend to be easier to digest and are higher in some nutrients such as vitamin C. You can throw sprouted beans in a salad for extra protein. Another option is make a fast, fiber packed side for dinner by tossing sprouted whole grains with olive oil, lemon juice, nuts and parsley. YUM!
No added Nitrates or Nitrites - Most Nitrate and nitrite free processed meats are free of synthetic versions of the chemical preservatives , but not the naturally derived ones that come from celery, salt or powder. Since high levels of either my be linked to cancer, bacon and deli slices shouldn't be on your menu everyday. When they are reach for meats with no added nitrates or nitrites.
Hope this helps clarify just some of the very many confusing food labels you see and feel more confident in making better food choices. It can be a lot to remember, at least for me. There are many other confusing words and phrases that I try to keep straight. What I do is wright them all down. That way when I go shopping I can pull out my list and I won't be struggling to remember what is "good" and what is "bad." Plus it will save time!

Do You LOVE Eggs? A MUST Have IS The Egg Cooker!!
Cuisinart CEC-10 Egg Central Egg Cooker
I got this awesome little gadget from my sweet husband for Christmas and I...am...in...love with it! I normally have a hard boiled egg (actually I like mine medium) most mornings for breakfast. This little cutie does all the work and guessing time for me. I place my egg(s) in side add my water and simply turn it on and go about my business. I don't even have to watch it boil or time it. It lets ME know when she's ready. Yeah, It's a she. Absolutely a must for the person that makes a lot of eggs.
Plus, last weekend I made the entire family, there are only three of us but still, omelets!! They looked great, tasted great and I even touched mine and it felt GREAT!!
Mine came from Bed Bath and Beyond and was priced for $39.95. Then when matched with their 20% coupon good ole' Santa saved a little more. Right now at Amazon.com (which I also love) it is showing for $39.95.
I would recommend this to ANYONE!!
- Easy to clean.
- Easy to use.
- Small to store. (I always hate getting new fund gadgets and not having a place to store them.)

Recipe Thursday - Green Beans With Bacon
Green Beans With Bacon
Time:
prep time: 10 minutes
cook time: 15 minutes
total time: 25 minutes
What You Will Need:
1 pound fresh green beans, ends snipped and thrown away. extra long beans, cut in half cut in half
3-4 slices of bacon
black pepper
salt
vinegar (or you can use red wine vinegar or 1 tablespoon lemon juice)
Let's Cook!
Heat a pot with salted water to a roiling boil. Add green beans and boil for 4-5 minutes. Drain and set aside.
While the water is heating up to boil start cooking your bacon until crispy in a large saute pan over medium-low heat. Be sure to set bacon on a paper towel to let the excess fat drain.
Once the green beans are cooked, saute them for 2 -3 minutes in the bacon fat. Be sure there is at 1 tablespoon of fat left in the pan.
Dice the bacon and add to the pan and saute another 1 -2 minutes. Put the beans and bacon into large serving bowl and sprinkle generously with freshly ground pepper. Toss with vinegar (or lemon juice or red wine vinegar)
Enjoy!!

Recipe Thursday - Crockpot Swedish Meatballs
Crockpot Swedish Meatballs
Time:
prep time: 15 minutes
cook time: 8 hours
total time: 8 hours, 15 minutes
What You Will Need:
1 lb. pkg. frozen cooked meatballs
1 onion, chopped
2 cloves garlic, minced
2 (10 oz) cans cream of mushroom soup
1/2 cup water
1 cup sour cream
2 Tablespoons flour
1/4 teaspoon pepper
mashed potatoes ( can also be served with cooked hot rice)
Let's Cook!
Place all the ingredients except the sour cream, flour, pepper and potatoes in a 3-4 quart crockpot. Cover and cook on low for 6-8 hours.
In a small bowl, combine sour cream, flour and pepper and blend well. Add a spoonful of the hot liquid from the crockpot and blend. Add the sour cream mixture to crockpot, stir well, cover, and cook on low for 30 - 40 minutes until thickened and blended. Serve over mashed potatoes (or hot cooked rice).
Enjoy!!
I served the Crockpot Swedish Meatballs served with Green Beans with Bacon. A new favorite for our family!!

My NEW Favorite Salsa
How many of you shop at Sam's Club? I am usually there a couple times a month. I used to go every weeks for my coupons, but they sell papers anymore. (BOO!)
I believe I have found my new favorite salsa! That is always exciting !! It meets all the requirements:
1. Delicious
2. Spicy
3. Good value
4. low calories
5. low sodium (important one for me,)
6. The family likes it
Salsa usually is low in calories, but the sodium isn't as low as I would like it to be in some Salsas. We usually buy On the Border Salsa from Sam's. It has a good taste and my husband myself and even my daughter loves salsa so we eat a lot of it. I want to make sure I am buying what is best for them and still getting a good value.
As you can see if you compare On the Border with the Italian Rose Fresh Salsa (my new favorite), the calories are similar, but there is quite a difference in the sodium.
Plus, to me the taste is different. They are both good, but the Italian Rose does taste like fresh homemade salsa.
Now to compare the price. Forgive me, but I don't have exact prices.
Italian Rose - 46 oz. $6.98
On the Border - 47 oz. $5.48
The Italian Rose is a little more for basically the same amount, but for the difference in taste and sodium it is certainly worth it.

Last night I had my Pampered Chef party. It was a blast and I had a great turn out. Thanks to all the great ladies that either came or ordered through me online. You are all awesome!! The party closes tonight, so if there are any last minute orders please let me know.
It was a Mexican theme and so I decided to make my delicious, never fail and oh so naughty Burrito Bandits. I have never came across anyone who didn't like these. I have made these for many different types of parties and they are always a hit. Plus, you can change them to what you or your guests would prefer.
I also have added green olives and jalapenos.

Burrito Bandits
1 -8oz. pkg. cream cheese (soften)
3/4 cup sour cream
1 - small bunch of green onions
4 oz. black olives
3T Mayo
3/4 cup - 1 cup shredded cheese
1/2 -3/4 cup salsa
Mix all together. Spread on tortilla. Makes 8 - 10 burritos. Best when chilled overnight before cutting.
I also have added green olives and jalapenos.
Make sure all the cream cheese is mixed in.
