What Does Easter Mean To You?

For me, Easter means a lot more than chocolate bunnies, Easter eggs and candy.  On Easter we celebrate the resurrection of Jesus Christ with our friends and family.  It is a time for fun, laughter, prayer, joyfulness and of course a few eggs to hide, candy to eat and of course the Easter Bunny.  Di you know that Easter is typically the most well-attended Sunday service of the year?  I know every year at our Easter service it is hard to leave with a dry eye.  The sermon is so powerful and the room is full of love, prayers and pure awesomeness!

I would like to share a little of my families Easter 2012.

Hope Your Easter Was A 10 On The Fun Factor!

Easter this year can be described in many words.  Awesome, crazy, inspiring and cheerful.  It started on Friday with my mom, Grace and I baking a few things for Easter Sunday.  We had a lot of fun!  Growing up my mom always cooked wonderful meals.  Always had dinner on the table and the food she made was good.  I took a lot from her cooking.  Baking, not as much.  I recall my moms cookies being a bit hard and crunchy and the pies were always left up to my grandmother.  I would say I followed in my mother's footsteps as far as baking goes. 

We tried to make the Rice Krispie Easter Surprise Eggs I talked about earlier.  They were actually pretty easy, but I messed up the amounts and put way to many marshmallows in.  So then we added more Rice Krispies and well, it was just not working out.  We did get a few made, but they ended up being super hard.  The important part was the fun factor and I rate it a 10! 

P.S  I will try it again next year, but perhaps watch my measurements closer.  lol


 Grace washing the plastics eggs.  The recipe says to use 12 plastic eggs.  You really only need one egg per person .  So now all our plastic eggs are shiny and clean.  : ) 
Did you happen to notice how dark it was outside?  This was taken at 11am.  We were getting some terrible storms at this point.

Our next dessert had much better results.  As I had mentioned, my mom and I are not great at the pies and cookies, but simple deserts and cakes we can do!  We made Banana Split Dessert.  Oh my!  This is just a wonderful, wonderful dessert.  It is just to yummy to mess up.  I think we were having too much fun because I didn't get to many pictures making it.  I guess we were too excited to make it. 

Here is the recipe:

2 1/2 cups crushed graham crackers
1 stick butter (melted)
1/4 cup sugar
1 brick cream cheese soften (leave out all morning for better spading)
1 cup powdered sugar
1 can crushed pineapple (drained completely)
3 bananas sliced
2~ 4 servings instant pudding (banana or vanilla)
1 1/2 tub cool whip

Crush graham crackers.  Mix together with sugar and and melted butter in bowl.  Press into a 9 x 13 pan.  Freeze for 10 - 20 minutes in the freezer. 
Mix cream cheese and powder sugar together until creamy.  Spread over graham cracker layer.  Then drain pineapple and spread the pineapple over evenly.  Next cover with sliced bananas. 
Mix pudding with 2 cups milk until thick.  Next add 1 cup cool whip to pudding and mix well.  Then add on top of banana layer.  Cover and refrigerate until set (10 - 15 minutes).  Top with remaining cool whip before serving.  Drizzle with chocolate and top with cherries are optional. 


This was before I added the chocolate.  I didn't have any cherries to add this time.  YUM!!

Sunday we had a lot of fun!  We witnessed an amazing Easter service.  My father was not feeling well so he was not able to come.  We missed him being there, but know he wanted to join us.  After church we were onto to good food, egg searching and fun times with family!  My daughter Grace always has so much fun with her cousins!  It brings such a smile to my face and heart seeing them laugh, play and talk about anything and everything.

Hidden Surprise Easter Egg Treats Recipe

One evening we were all watching T.V. and this commercial came on.  It was for this recipe for Easter eggs from Rice Krispies.  Both Grace and I noticed it an decided we were going to make them!  We were excited because they look so fun and yummy! 

3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows - OR -
4 cups miniature marshmallows
6 cups Kellogg's® Rice Krispies® cereal
1/2 cup M&M's® Easter colored chocolate candies
Canned frosting or decorating gel (optional)
12 plastic snap-apart 3 x 2-in Easter eggs


1. Clean, then coat inside of plastic eggs with cooking spray. Set aside.

2. In large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

3. Add Kellogg's® Rice Krispies® cereal. Stir until well coated.

4. Using greased hands, firmly press 1/4 cup of Rice Krispies® mixture into both halves of each plastic egg. Use fingers to make hollow center in each half. Remove from molds. Place on wax paper. Cool slightly.

5. Place about 6 M&M'S® Brand Chocolate Candies in one half of each egg. Gently press two halves of each egg together until they stick. Cool completely.

6. Decorate with frosting and additional M&M'S® Brand Chocolate Candies (if desired). Best if served the same day. Serving size is 1 egg.


MICROWAVE DIRECTIONS: Follow step 1 above. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 3 through 6 above. Microwave cooking times may vary.

Notes:

For best results, use fresh marshmallows.

1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.

Diet, reduced calorie or tub margarine is not recommended.

Store no more than two days at room temperature in airtight container.

I have not made these yet with Grace.  I plan on making them for Easter.  I plan on posting my results when we make them.  I would love to hear from you if you make them.  Have fun baking and a Happy Easter!!

Welcome to week #2 of Hopping Along To Easter Blog Hop hosted by Tots and Me, Purple Froggie Clay Stuff and Classified:  Mom!! 

This weeks topic (question) is:  What are your favorite Easter recipes?  Breakfast, lunch, dinner, desserts or snacks? 

There are so many favorite foods that come to mind when I think of Easter, any holiday really.  The one that honestly stood out was Deviled Eggs.  I finally learned how to make deviled eggs last year and this recipe is super simple. 



6 hard-cooked eggs, peeled & cut lenghtwise
1/4 cup light Mayonnaise or salad dressing
1/2 teaspoon white vinegar
1/2 teaspoon dry ground mustard
1/8 teaspoon salt
1/4 traspoon ground black pepper
Paprika for garnish

Pop out( remove) the egg yolks into a small bowl & mash with a fork.. Add mayonnaise, mustard powder, vinegar, salt & pepper and mix throroughly.  Fill the empty egg white shells with the mixture and sprinkle lightly with paprika.

Cover lightly with plastic wrap and refrigerate for up to 1 day before serving.
